It's not the most charming village in Lorraine, but people sometimes come from far and wide to discover Bruno Poiré's creations. The chef imagines an experience that is meticulous from start to finish, from the refined setting to the presentation of the plates and the precision of the cooking and seasoning. The chef works as much with the land as with the sea, and his €130 menu features some very fine compositions, including a Breton lobster sliced raw, caviar from France, lobster foam and dashi juice, a spiced and caramelized pig in leaf with truffled celeriac, a Breton sea bass delicately cooked with peas, poached rhubarb with red berries, Breton shortbread and Catalan cream. Remarkable cellar.
