Gourmet Restaurant Émile remains a bourgeois reference for most of the city, the temple of cassoulet, a beautiful house on one of the emblematic squares of this chic Saint-Georges district. It seems, however, that while the plate is often a two-star affair, with the veal tartare, zarzuela and Grand Marnier soufflé, but a little less so with the sole, overcooked and too dry, there isn't currently a huge amount of enthusiasm for keeping up the acquired level, all the more so as the prices remain quite serious and the wine list seems to have stuck to the models of the great cellars of yesteryear. No matter, since the room is full, but a little boost would be welcome.
