Gourmet Restaurant The reputation of the restaurant is such that it's a no-brainer. Tourists come for a reassuring local heritage, with a first-rate cassoulet; Toulousans love the comfort, the recognition for regulars, and the traditional menu wide enough to renew the choice with each visit: scallops and foie gras, ginger and lime marinated salmon, Catalan zarzuela, grilled duck breast with honey and spice sauce, sweetbreads braised with floc de Gascogne and mushroom macaroni. A professional service in every respect, with contemporary desserts (pavlova, baba...) including the indispensable Grand-Marnier soufflé. The €45 Émile menu is a good introduction. Extensive Bordeaux southwest wine cellar.
