The two brands share the same name: Chez Démé, named after its creator, Demetrio Lavilla. While the restaurateur runs the Fontainebleau trattoria alone, with its incredible view of the château, he has teamed up with Eva and Chloé Vidnar and Charles Hoffman (spouse, sister-in-law and brother-in-law) for the Samois-sur-Seine trattoria. Both are decorated with antique mirrors and feature the color burgundy, a sign of the Chef's attachment to his home town of Reggio Calabria. Pizza Démé with gorgonzola, mozzarella, honey, chopped steak and walnuts, pizza Porcina with porcini mushrooms, porchetta (roasted cooked ham), mozzarella and pistachio, or homemade tiramisù: all your senses are sure to be enchanted by the smells, flavors and ambience of Southern Italy conveyed by these traditional family recipes.
