It's impossible to talk about Nice without mentioning Pierre Altobelli, one of the apostles of Niçoise cuisine. His little bistro is a classic of the day, often full and happy, where you fight a little to rediscover the great local specialties, declined by the chef in versions to share. Depending on the season, there's a real ratatouille from Nice County, zucchini flower, linguine with pistou, coco e fagiolini, peach tuna in olive oil, vegetables stuffed with lamb.
