Gone are the flavors of Eastern Europe; make way for a contemporary take on bistronomy—both inspired and beautifully presented. The dishes are right on trend, and Justine Audoin showcases impressive technique on this €25 menu, which features dishes like celeriac ravioli with confit egg yolk, Bologna-style Parmesan, or the catch of the day with eggplant, smoked caviar, green beans, and cherries. The evening menu offers an even more intriguing selection, featuring tapas-style dishes where the chef lets her creativity shine: mussels marinière, pickled celery, miso mussel ice cream, potato/shiso siphon, potato straws and bottarga, a crudo combination of whiting, roasted almond cream, nettle gel, and fir oil, or even mushroom ice cream, shortbread, and hazelnut praline.
