This is a place for insiders, not for everyone. It's a place not to be visited by everyone, but only if you know what you're getting into, summarized on the large slate, with names of winegrowers that thrill: Sélèque, Ulysse Colin Egly Ouriet or Selosse in Champagne, Leroy, Sauzet, Comte Lafon, Dujac, Roulot, Coche-Dury and so many others in Burgundy, Chave, Beucastel, Jamet in Rhône... Everything is said, but told by Bruno, the flavor is even stronger for this great bachique moment. At the counter, we remake the world with a little pata negra, rosette de Haute-Loire, dry sausage, andouille du Béarn, culatello...
