Gault&Millau's review 2025

The Hôtel des Postes, a UNESCO World Heritage site and a historic landmark in the Neustadt, has undergone a remarkable renovation. Since spring 2023, it has been home to a stylish brasserie, frequented by the whole of Strasbourg for its lively atmosphere, its five-metre high ceilings and its contemporary bar decorated with four hundred leaves, a nod to the place's epistolary history. In terms of cuisine, simple dishes such as os à moelle, tartare-frites or pâté en croûte pistaché with its gourmet flesh are already must-tries. The pretty vol-au-vent of veal and poultry, enhanced with morel mushrooms and sweetbreads, though generous and rich, is accompanied by puffed spätzle whose au gratin cheese flavor struck us as incongruous. As for the bisque sauce that was supposed to accompany the fresh, fairly well-cooked sea bass fillet, it was integrated into the mass of the accompanying risotto. A selection of elegant-looking pastries, such as the chocolate-coffee tartelette with Dulcey ganache, is presented in a glass case. The pastry is not very greedy, but it is filled with an excess of coffee that dominates the chocolate component. A nicely commented wine list, with a dozen wines by the glass.
