Remarkable Restaurant
Roots and rebirth. That’s how one might sum up the arrival of this new restaurant in the peaceful countryside of Vitré. Indeed, this late-19th-century château has regained its former glory after several years of interior and exterior renovations. It is also the setting for a new chapter in the life of the South African chef, whose distant ancestors left France in the 17th century. Richly furnished, the ground floor—which opens onto the grounds—features relaxing lounges and an intimate dining room seating about fifteen. Largely inspired by the natural world, the cuisine is precise, harmonious, light, and visually vibrant. The tone is set right from the start with a long series of appetizers. Next comes, for example, gravlax salmon enhanced by pickled mushrooms and topped with a coconut foam. Let’s keep the surprise intact by merely mentioning “the alchemist’s infusion” without revealing its contents. Next comes the plump pigeon, enhanced by a beautiful cooking jus deglazed with red wine and port, not to mention a few notes of truffle. The small accompanying vegetable salad adds a refreshing touch. For dessert—which is very lightly sweetened—high-quality chocolate plays off the cherry. Patiently built up over the years in South Africa and partially repatriated, the wine cellar is simply remarkable. Just like the service, which exudes distinction, presence, discretion, and exemplary kindness.
