The rather extraordinary setting of this fortress perched in the beautiful countryside of the Haut Var is a real promise kept. All that's needed is a few lordly touches to make everyone feel like a prince for the evening. As luck would have it, the house has opted for a no-frills, no-frills style of cooking, with young chef Théo Barberis mastering the bistronomic cuisine of his time, allowing diners to enjoy the setting without the heaviness: tuna tataki, foie gras mi-cuit, gilthead bream and squid ink gnochettis, filet of beef panisse and asparagus jus réduit with Trigance honey...
