Chef's Restaurant North of Besançon, set in unspoilt countryside on the banks of the River Ognon, this superb manor house is home to a 4* hostellerie, as well as a gourmet restaurant designed by Antony Serra. Under the beautiful black-steel veranda, the chef draws on his experience of fine dining, notably at William Frachot's in Dijon, and unveils a refined terroir cuisine, the logical conclusion of the chef's history and encounters. The €65 menu perfectly captures the spirit of the seasons, with cod acra and horseradish, pork shank, comté and hazelnut, grilled swordfish, small vegetables and Grenoble-style condiments, rack of veal, sweet potato and sage peas, rum baba and red fruit. Well-stocked cellar.
