Gault&Millau's review2026
Just a few minutes from Uzès, Château d'Arpaillargues is a splendid 18thᵉ century seigniorial residence, where you can enjoy a 4* hostellerie in a historic setting. For meals, chef Philippe Houy occupies a beautiful space not far from the swimming pool, where in high season you can discover traditionally inspired cuisine. On the menu: sea urchin bavaroise on tielle pastry, broccoli velouté with shellfish oil, grenobloise-style peach return and salsify croquette, parsley emulsion with hazelnut butter, roast pigeon fillet, creamy enokitakés, potato gratin stuffing, chocolate fondant, caramelized pecans and macadamia, blood orange duo.
