Chef's Restaurant This is a two-headed address run by the couple Maëlyss Vultaggio and Éric Maillet, the former occupying the lunchtime slot with fusion cuisine, and the latter taking over the kitchens at dinnertime, for a more gastronomic and Mediterranean approach. The spirit is resolutely open and contemporary, with an elegant patio at the back and a beautiful, subdued dining room, where you can discover refined compositions. The €48 menu is worth its two toques, with its raw fish, pomelo salad, infused citrus juice and shrimp powder, its beautiful reinterpretation of ramen, based on cuttlefish, tantanmen broth, ajitama egg, noodles, pak choï and XO sauce, and finally the yogurt ice cream, kiwi tartar, kiwi/cucumber coulis, mint, dill and meringue. Quite a short cellar.
