Éric Maillet and Maëlyss Vultaggio's astonishing restaurant, named Mama Kyuna at lunchtime and Cédrat in the evening, is a fine work of four hands, taking it in turns to play two by two. The evening belongs to the former, a former member of the Passédat team, who offers an inventive and once again very well renewed menu. This year's ideas are as deliciously fusion as ever, with roasted cauliflower, tahini yoghurt, sriracha mayo and sweet chili, fish in coconut milk, Jerusalem artichoke and potatoes, ginger caramel, or shortbread, nakaaka, miso-peanut caramel and chocolate teriyaki.
