Gault&Millau's review 2026

It's one of the most legendary hotels on the Riviera, and its renovation has restored it to its former glory, with art deco charm that perfectly matches the building's architecture. The Croisette icon also benefits from the services of chef Laurent Bunel, who is dedicated to creating seasonal and regional cuisine to suit the clientele. The promises are kept, with well-balanced and pleasing plates, such as artichoke buttons and olive broth, truffle pizza, cream and salsa tartufata, a crispy tartlet of Provence vegetables, fresh goat's cheese, pickles and candied pear, a fillet of bass, nerone risotto, candied kumquat, shellfish juice and creamy turmeric, a rack of lamb from Haute-Provence lacquered with honey, eggplant mouttabal and spiced carrots. Very good service.
