Carbone has opened on Rue Bossuet, in the heart of Les Brotteaux, a residential neighborhood in Lyon teeming with competing restaurants. The decor is understated to the point of minimalism: exposed stone walls, Scandinavian furniture, spherical pendant lights hanging from a black ceiling, and at the back, the open kitchen where the oven takes center stage, facing the chef who prepares everything over an open flame—from vegetables to fish to meat. The fixed-course menu, available in five- or seven-course formats, presents a succession of seasonal dishes—from cucumber to summer truffles—culminating in a generously portioned pork loin to round out the savory portion of the meal. As for wine, the list proves to be unexpectedly deep: exclusively natural winemakers, ranging from accessible selections to prestigious bottles, and the option to have most bottles opened for glass service, based on the chef’s expert advice. The only downside to the meal: the lukewarm madeleine that closes out the menu slightly dampens the momentum of an otherwise ambitious dining experience.
