Starting with his grandfather, a canard-maker, Angel Morales has opened his traditional table centered on duck, a tribute to both the family and the region. The pleasure is immediate, with regressive, well-made creations: pâté en croûte de canard, lasagne à l'effiloché de canard, gratinée au cantal, magret de canard façon ramen et bouillon de carcasse, nougat de chèvre frais glacé, syrup de miel et sorbet roquette..
