Vartivar Jarkezian's cuisine is not melancholy, quite the contrary. Full of imagination and bubbling with energy, his cuisine is essentially inspired by a broadened and modernized Levantine tradition, which he brings to life in colorful, flavorful dishes: redfish carpaccio, pineapple, yuzu, buckwheat tuile and coconut cream, poultry supreme, broccolini and zaatar poultry jus, salmon dolma, foamed chicken...
