Grégory Goutoulli leaves to make way for Danielle Barbosa, who transforms her Bubo into Bucado, a mouthful in Brazilian Portuguese. The winner of Masterchef Brazil offers an excellent combination of French and Brazilian dishes, on a reduced menu where influences blend intelligently. The €48 menu is a fine example of technique, with matured beef, lacto-fermented grape juice, red pepper pesto and fresh herbs, corn risotto and duck breast, jambu and duck sauce, chocolate dessert and pumpkin velouté, chocolate ice cream, pumpkin velouté with nutmeg, candied pumpkin. Lunch menu €28 and Brazilian menu €65.
