Chef's Restaurant An interesting house that is revitalizing the Guérande landscape thanks to the contribution of Takashi Aoki, a worthy representative of the Rising Sun who worked for Etcheverry in La Rochelle, offering his uncluttered, product-focused vision in an equally elegant, minimalist setting. Each menu brings its own creations, the right taste, the foresight in a personal journey: mackerel parsnip eryngii, scallops turnip yuzu, veal squash kalamansi, goat plum sage and chocolate mushroom puffed rice. Each item brings its own share of curiosity and originality in formulas that evolve according to the number of courses. A warm welcome, discreet service and an interesting cellar led by a good sommelier.
