This is Colmar's finest brasserie, located in the famous Maison des têtes, built in 1609 and featuring no less than one hundred and six grotesque masks on its façade. This historic monument is the perfect place to discover the treasures of the Alsatian repertoire, created by chef Éric Girardin. Depending on the season, the recipes change, but they always live up to their promise: salmon trout from Nathalie Guidat, sour sauce, watermelon marinated in ponzu and lemon gel, pike quenelle, spinach shoots, rice and Riesling sauce, supreme of yellow Alsatian poultry, rice and supreme sauce, a dessert of cherries and almonds. Very good service.
