Chef's Restaurant
It is one of the most beautiful brasseries in Alsace, located in a historic building dating back to 1609. On its façade, 106 grotesque masks capture the imagination, while inside, Éric Girardin invites guests to rediscover the great classics of the culinary repertoire. The experience is almost solemn, so rich in history and tradition are these beautiful recipes, which the chef has reimagined so skillfully. The menu features a foie gras appetizer with green beans, apricot, and toasted brioche; a pike quenelle with baby spinach, rice, and a Riesling sauce; a yellow chicken supreme with crayfish, crispy-yet-melt-in-your-mouth potatoes with lemon thyme, sweet onions, and fava beans; and a lemon sorbet drizzled with Gewürztraminer marc.
