Completing the compass rose of the Bocuse empire to the west, his brasserie in the industrial district of Vaise has been a fixture on the right bank of the Saône, delighting loyal customers for over twenty years. It's a lively setting and a versatile cuisine to satisfy every craving, with a real kitchen brigade. You'll find Caesar salad, traditional pâté croûte, prawn nems, fresh tagliatelle with truffled ham, poached hake with coconut-ginger emulsion and basmati rice, pan-fried veal liver à la lyonnaise with mashed potatoes and fresh spinach, spit-roasted Miéral farmhouse poultry from the Dombes region with morel cream sauce, and traditional baba au rhum.
