In the setting of this superb 5-star hotel on the boulevard, residents and occasional guests now enjoy a fully-fledged restaurant and a well-crafted menu, with the ambition of rallying around consensual ideas: gravlax of trout with Alpilles goat's cheese, citrus and pineapple gel, piece of roast monkfish with sauce vierge, confit of Crau valley pig breast. Fairly high prices (€75 à la carte, full sequence), good service.
