Bombance is a good idea, but at Bombance, it's serious business, even if it makes you smile with pleasure. The menu may be short, but the efforts are visible: care is taken with the plate, with quality products, providing an impeccable €39 menu, which seeks good taste before originality: mackerel à la flamme smoked beet coriander, snacked pollack cauliflower boudin fumet vanille, cochon bbq cream celery cabbage confit, pavlova citrus meringue seaweed nori sorbet dulse, a flawless sequence, served with naturalness and knowledge, notably on the cellar, well seen on the offer by the glass: viognier d'Ardèche, riesling Funambules, abouriou du Haut Planty..
