This is THE trendy spot in town, a counter a few minutes from Rue Vasselot where both glass and plate are the subject. The former is the preserve of Pierre Hollerich, while the latter belongs to Gaëtan Coculo, formerly at L'Avant-poste in Paris. The tandem works perfectly, and diners come to discover both the sommelier's superb selections of natural wines, never boring or too fashionable, and the chef's lively plates, to share or not. You can stand in front of the open kitchen and admire the show, watching asparagus in a bisque of green crab and blood sorrel, a pressé of beef cooked the day before, cabbage, citron, parsley and wild garlic in millefeuille, a gourmet praline cabbage. In the cellar, you'll find everything you need: Domaine ami, Jérôme Lambert, Les funambules, Fabien Jouves, Jean-Claude Lapalu, Ganevat, Bruno Duchêne, domaine Tissot, prieuré Roch... And a host of spirits, liqueurs and craft beers.
