Chef's Restaurant For 10 years now, Florent Ladeyn has been taking us on a journey through Flanders with his 100% local cuisine, a DNA that has remained unchanged since the beginning. Forget the former garage on rue des Bouchers, now a mecca for a wild culinary experience rooted in his values of caring for his producers and his land. The chef appropriates classics and invents new ones, resurrects forgotten vegetables like heliantis, and makes us fans of celery. Don't drink cocktails? Try the house tagetes, sea buckthorn gins, apple or other fruit mousses, ginger powders, and you'll change your mind in a sip. Dashi broths, melt-in-your-mouth chicken, crisp salads and chicories, powerful bisques and étrouille juices, guest regional cheeses in buckwheat creations, all served by a young brigade happy to be there. Will multi-course menus with non-alcoholic beverage pairings become the new trend on the culinary scene? A successful bet, thanks to the many kefirs, fermented juices, ginger beers and homemade infusions on offer. When it comes to wine, you don't come here to read a long list, but to be surprised by natural choices from independent producers. And instead of coffee, let yourself be lulled by a chicory juice much more in tune with the house.
