Gault&Millau's review 2026

This new bistro is a lovely surprise—nestled in the heart of this village known as the cider capital, right next to the church, and opened just a year ago by Jeanne and Romain Cauvin. After traveling the world (Australia, New Zealand, Canada…), the chef worked at L’Essentiel in Deauville under Charles Thuillant before opening his own restaurant. There, he offers seasonal cuisine that’s fresh and well-balanced—still fairly simple in concept, yet expertly prepared and reasonably priced: haddock spring rolls with herb-seasoned vegetables in a honey and cider vinegar sauce, farm-raised Bayeux pork with butter-sauteed beans, red bean purée, and a red berry and shiso vinaigrette; vine peach gazpacho with lemon, ginger, and yogurt sorbet.
