Good addresses in Bar-le-Duc are few and far between, and Jean-Christophe Cordel is one of them. For the past twenty-five years, his "bistrot" has been one of the best addresses in the prefecture, offering an unrivalled market menu and gourmet dishes compressed into a €46 formula. The chef revisits his menu with the seasons, offering versions that are always convincing: a 64°C perfect egg with seafood and bouillabaisse juice, a steamed pike-perch back with baby vegetables and emulsion, a rare beef fillet with a cream of morels and oyster mushrooms, a praline, chocolate, ganache and custard crunch.
