There aren’t many great places to eat in Bar-le-Duc, and at his level, Jean-Christophe Cordel stands alone. For twenty-five years, his “bistrot” has been one of the best spots in the prefecture, offering an unrivaled market-driven menu featuring gourmet dishes packaged in a 47€ set menu. The chef revamps his menu with the changing seasons, offering consistently impressive creations: a perfectly cooked 64°C egg with seafood and bouillabaisse jus, a braised pikeperch fillet, small vegetables, and an emulsion; a rare beef tenderloin with a morel and oyster mushroom cream; and a crispy praline with chocolate, ganache, and custard.
