Chef's Restaurant Good work and fair prices: Benjamin Schmitt's offering in this modern bistro range is quite simply one of the best on the market. Cook's work, finished and polished plates, in the expected range: squid stuffed with citron, iodized bolognaise and puntarelle, slow-cooked pork loin with braised parsley roots and vinegared celery, mont blanc with chestnut, mandarin frosted with bourbon vanilla and cognac jelly. And dishes with real character, like the impeccable and generous cassoulet. A five-course Dégustation menu at €74 is available for lunch and dinner, and a lunch menu at €38.
