On this balcony in Gassin, with its 180° panoramic view over the bay and hills, this restaurant plays the chic, gourmet card. It's a gamble designed to satisfy a very broad clientele, who often examine the offers of all the tables clustered together in this space to the penny. Chef Sylvain Humbert offers meticulously prepared regional cuisine: rock octopus stew with white wine, Espelette pepper and preserved lemon, skin-roasted bass fillet, coconut bean broth with tarragon, steamed spinach shoots, quasi veal with savory, potato salad with red onions and herbs, in a rich €54 menu.
