Camille Delcroix has established his own style in this house familiar to all Audomarois (it was once the Cygne), paying vibrant homage to his region, and conceding nothing to his desires or fashions. A product of Marc Meurin's fine school, and beyond his media coverage in Top Chef, he can afford to include on his 4-sequence, €90 menu, veal strawberry with Foyot sauce, pig's trotter with local tomatoes and rocket condiment, artichoke and redcurrants with Flanders squab and rhubarb for dessert. The setting is refined and personal, the service well-involved and the cellar varied, with a good selection by the glass.
