It's a Provins institution. At Les Vieux Remparts, it's a stopover for traditional visitors, but also the classic rendezvous of today's fine dining, which goes a little beyond its bistro status: foie gras opera with red fruit mirror, veal medallion with carrot mousseline and cumin, strawberry and green apple sablé with thyme jelly. Classic cellar.
