In a small Savoyard chalet a hundred meters from the border, decorated in a slightly old-fashioned but warm style, the chef defends a fine traditional cuisine of bourgeois and French obedience. The tone is classic, but the ideas are always very popular: a brioche perdue steamed with poppy seeds, perfect egg and milk of plenty emulsion, ballotine of féra, sauce vierge montée with olive oil and lemon, slow-cooked veal filet mignon, cream of mushroom, a strawberry house.
