La Table Bordier, in the heart of Saint-Malo, is more than a brand name, it's an emblem. Beyond the success of this Malouin house with its world-famous butter, locals can feel a legitimate pride: the plate is convincing, elaborate, and corresponds to the values of the house as well as the region. The scallops are enriched with endives with honey and parsnip mousseline, chicken broth with Bordier truffle butter; the salt-meadow lamb is accompanied by grenailles confit with Bordier butter, Espelette pepper and eggplant caviar; the blood orange fondant uses yuzu butter and milk jam ice cream. The quality of the ingredients is evident in every service, as is the quality of the welcome in an atmosphere that remains natural. Good lunch menu at €32.
