Chef's Restaurant Of course, at the height of the season, the luxurious "Diamant Noir du Périgord" menu is a big hit with a wealthy clientele who don't hesitate to cross the German or Luxembourg borders to indulge in a fine (and costly) moment of gourmet pleasure at the Schneider family. In a setting that's at once plush and a little old-fashioned, but so reassuring when you're a regular, Stéphan Schneider strives to please a clientele that doesn't come to Saint-Walfrid to be shocked, but above all to be pampered by immediately readable dishes: pan-fried foie gras, beef broth and fried onions, brill and a variation on Brussels sprouts before a lovely work on citrus fruits and clementine sorbet. The products are superb, the technique tried and tested, but one would sometimes like to see more risk-taking on the plate, as in a cellar that is certainly very complete, but very classic.
