Gourmet Restaurant Founded by parents Ursula and Nicolas Ramstein almost 30 years ago, this peaceful hotel-restaurant with its family home atmosphere, located on the edge of the village and surrounded by vineyards, is now run by son Lucas, who trained at Le Chabichou. In the dining room, whose 90s-style Provençal yellow is starting to look a little dated, the young chef offers permanent weekday menus and a different, imposed theme menu every weekend. On our visit, we sampled the Alsace-Gascogne menu. As an amuse-bouche, we were presented with a pleasant deconstructed tarte flambée: pan-fried onions, lardons, crispy pastry pieces and a light fromage blanc cream. Then we tasted a deliciously homemade duck terrine with a heart of Gers foie gras. Salmon trout from Val d'Orbey, carefully cooked without being too smoky, is served with a delicately tangy sauerkraut and a fine Riesling sauce. The Gascon duck fillet is flanked by a tasty confit leg; the whole is enhanced by a reduced, aromatic jus poured at the table, but the square peas seemed a little bland to us. We concluded with the pastis gascon with apples, prepared in a crisp brick pastry and accompanied by a vanilla ice cream that was far too hard. We wash it all down with wines by the glass chosen from a selection of fifteen, mostly local. The current economic climate has undoubtedly led this fine establishment to make a few restrictions, both in the composition of its menu and in the little touches we used to appreciate.
