Just off the Route Nationale 7, this former 16thᵉ century coaching inn is a charming Provencal mas, run by Gabriel Astouric for almost forty years. Nothing changes, or very little, in this timeless place where signature dishes delight regulars: truffle-scented cream and poached egg, grated black truffle, whole shelled lobster with tagliatelle and Armoricaine sauce, roast Pornic pigeon and lentils simmered with foie gras, dessert with calisson d'Aix and candied Apt melon.
