Chef's Restaurant Au cœur de la Montagne de Reims, l'auberge est une de ces étapes iconiques où l'on fait naturellement un arrêt, bien évidemment pour la belle cave à champagnes, mais aussi pour la cuisine à quatre mains de Dominique Giraudeau et Pascal Champion. Respectivement en place depuis 1992 et 1998, les deux chefs exécutent une belle cuisine de produits nobles, déclinée dans des menus aux prix élastiques, de 55 à 240 €. À découvrir, le homard melon en vinaigrette aigre-douce, le saumon mi-cuit au caviar, le saint-pierre, gamberro rosso et huîtres Gillardeau, le pigeonneau fermier sauce poivrade ou encore la pavlova aux fraises.
