Chef's Restaurant A beautiful, sumptuous auberge in the heart of the Montagne de Reims park, where you can admire the gardens from a contemporary room with bay windows and a ceiling of light wood slats. In the kitchen, Dominique Giraudeau and Pascal Champion pull out all the stops, using noble products to match the champagne, notably in this €155 menu featuring lobster melon, semi-cooked salmon with caviar, roast foie gras with old ratafia, line-cut Brittany stave, gambero rosso and Gillardeau oyster, roast Challans duck on the bone with blackcurrant sauce, and red fruit pavlova. Very fine cellar.
