Not far from the lake, a table-auberge with a view of the surrounding countryside and local charm, for a change of scenery in the heart of the country. Laurent Saint-Martin's address is a happy encapsulation of what the region has to offer in terms of hospitality and gourmet delights, and we salute the fine traditions on the menu, the cassolette of porcini mushrooms, the 24-month house-cured ham, the line hake flambéed in pastis, the squab stuffed with cabbage and foie gras, and the nougat glacé with raspberry coulis.
