Just a stone's throw from a panoramic viewpoint over the Côte d'Azur, the ruins of a medieval castle and the remains of its surrounding wall, the stone-clad Auberge du Vieux Château offers a refined showcase for carefully selected produce. Chef Tim Cinquin takes inspiration from traditional dishes and revisits them to perfection: carpaccio of cooked and raw chioggia beet with goat's cheese and walnuts, tangy vinaigrette with citrus zest; gourmet raviole of Saint-Marcellin and Var figs on a velvet of porcini mushrooms, followed by a French veal wellington in crispy puff pastry with cured Dolomite ham and veal jus creamed with morel mushrooms, and a bouillabaisse-style Saint-Pierre of rock fish on a bed of glazed baby vegetables and potatoes with crispy potato chips. To finish on a sweet note: the traditional Grand Marnier soufflé with kalamansi ice cream, or the rice pudding delicately scented with orange blossom, candied kumquat, fresh mango, organic mandarin sorbet and white chocolate tuile with lemon caviar... Service is attentive from start to finish, and a wide choice of beverages is offered, with real thought given to the accompaniment at every moment.
