Remarkable Restaurant The experience begins on the road. Careful driving between cyclists in love with the roads of Flanders, glances at the rolling hills and, hidden behind fields of corn and hops, the family-run inn finally appears, offering a splendid view over the plain, whatever the weather. The team is ready and happy to welcome impatient guests around the wood-fired centerpiece, which crackles with toasted eggplant water. Between the classic frites au maroilles, local vegetables and the chef's travel inspirations, it's a cuisine that's inventive, raw and full of flavor, telling the same beautiful story of simple sourcing and the inspiration that nature gives the chef, more locavore than ever. A story of creations both on the plate and in the glass, with preparations such as kefirs, kombuchas and other fermentations by sommelier Aurane and her in-house beers. The €80 total experience menu takes us from the northern coast to the auberge's gardens, with oysters served with cucumber, sea bream sashimi under a flame-grilled salad and mussel jus. A short detour to the Basque country with grilled octopus and a merguez powerful with its attic-dried spices. Lamb from Flanders takes us back to the North with grilled eggplant and sardine charcuterie, before finishing with a Danish touch and a dessert of blackberry and agastache, with a taste of almond rediscovered thanks to meadowsweet. So many faraway flavors found with exclusively local products, such is the identity of the inn as intoxicating as ever.
