In cinemascope, this is where Lake Annecy offers its most beautiful backdrop: Talloires Bay. And when the very last rays of sunlight are reflected on the beautiful windows of the Auberge du Père Bise, time seems to stand still. Not a wrinkle, not a fold too many, always as sharp as a top-level athlete. Here, he prepares his service like a mountain guide. Everything has its place, nothing is left to chance. A style of rare elegance, but one that also gives free rein to the rusticity of the plants, flowers and fruits of the Alps. The tomato and gentian is undoubtedly one of the most beautiful variations you can try. And if you prefer the scents of calament, beans, braised fennel or tangy vinegar will lull you into a summer's night dream. Ultra-local fishing is a must here. Florent Capretti, the fisherman, offers his finest finds every day. Crayfish are flame-seared and paired with Savoy saffron. We only regret this misty, nitrogenous setting. The scent of the product is enough to take us on a journey. The féra is cooked on one side, accompanied by a watercress jus and garnished with diced féra. Would you like to continue with a cheese platter? The ercheu here is both spectacular and simple. Three huge wheels of mature Beaufort cheese sit here before you.
