Nestled in the heart of the Compiègne Forest, this hunting lodge is, above all, a place to enjoy exquisite game dishes. Chef Guillaume Burlion, who arrived here with an impressive international background, has rediscovered the joys of traditional cuisine—both French and regional. Highlights on the menu include the game terrine, frog legs with parsley, Vendée ham with mogettes beans, veal Wellington with foie gras and Périgord sauce, wild boar stew, and a tarte tatin with quetsches. The service is pleasant.
