A little corner of the Basque Country in the heart of the Ardennes, right down to the white and red decoration of this former inn, evoking the traditional colors of houses in the southwest. The address is the result of a happy encounter between André Vaquero from Biarritz and Florence from the Ardennes, leading to this pretty regional table, where the pleasures of the Atlantic coast can be found on the slate. On the €36 menu, piquillos stuffed with fresh goat's cheese, eggplant caviar and gazpacho, sea bream with vegetable confit, pork belly confit then snacked, homemade sausage with Basque spices and potatoes, a pistachio moelleux and raspberry sorbet.
