Gault&Millau's review 2026

It's a piece of history that has stood the test of time, a grand inn on the Atlantic seaboard. Run by the same family since 1870, this fine hotel-restaurant keeps alive a genuine tradition and art of entertaining, in a classic setting. In the kitchen, chef Mathias Martin performs a fine technical exercise, with petits gris du Poitou, light garlic cream, fried flat-leaf parsley and parsley emulsion, wild sea bass, white asparagus, bear's garlic pesto and hollandaise, kid with green garlic, charlotte mousseline, 100% chocolate millefeuille, crunchy puff pastry, 66% chocolate cream, caramel, cardamom and cocoa sorbet. Great menu choices, from €39 to €120.
