On the outskirts of Cavaillon, this discreet house doesn't say much about the treasures it contains, but Niels and Virginie are quick to prove that it has a rightful place in our pages. It's a lovely country inn where you can enjoy attentive service, and a seasonal cuisine that's as much about the idea as the execution. On the €54 menu, scallops, cauliflower, watercress and black curry, wolf with cabbage, potato and hollandaise sauce, fillet of beef, risotto, mushrooms and butternut, a dessert of pear, champagne and hazelnut. Well-stocked cellar in the Rhône Valley.
