On the banks of the Loire, the Auberge de Port Vallières begins a new chapter under the leadership of the Dekeyser couple, who intend to preserve the soul of this fondettoise institution while infusing it with a more contemporary energy. The atmosphere remains warm and resolutely family-oriented, served by an attentive welcome and a service carried out with simplicity and kindness. The house remains faithful to its fine products: lobster, sweetbreads and foie gras are just some of the dishes on offer, demonstrating the restaurant's assertive gastronomic positioning. While the execution is generally fair - a soft veal sweetbread with reduced juice, an airy, gourmet rum baba - some seasonal choices are questionable, such as the tomatoes served with lobster in the middle of November. The rich, beautifully-constructed wine list will appeal to wine lovers, even if the selection by the glass doesn't quite reflect the level of the cellar. An honest and generous address, where one returns gladly for the atmosphere as much as for the noble products honored.
