Chef's Restaurant
In early 2026, Vanessa Charrier and Chef Hendrik Jansen van der Sligte opened this restaurant on the banks of the Loire to create an innovative culinary experience centered on river fish and local produce. From appetizers (chickpea falafel, rosemary gougères) to a dessert featuring raw and cooked nectarines and rhubarb sorbet with rose geranium, creative ingenuity is ever-present. Catfish, freshly caught from the Loire by local fishermen, is served either smoked over a sauce vierge with onion blossoms or as a thick fillet—its skin crispy—topped with slices of lightly seared zucchini and pickled zucchini; a dish that simply cannot do without sauce—it’s prepared like a beurre blanc but made with fermented peppers and left on the table for our greatest pleasure. The wine list, curated with the utmost care, focuses on the Loire Valley and features winemakers who are committed to and respectful of the environment. A new addition to the rich culinary scene of the Anjou region, this restaurant offers the cuisine of a creative chef who, right from the start, deserves his two toques.
