This large, traditional building in the heart of the village keeps its promise to remain faithful to local values. While modernizing recipes a little, it cultivates the goodness of its organic farm, which provides veal, beef and lamb: crispy head and shank of beef in gribiche sauce, organic oriental lamb tagine, winegrower fondue, tripe in apple juice... Drink beer from Signy Abbey, Oubliette from Charleville, or cider. According to new owner Geoffrey Fournier, the Auberge will be changing hands this autumn, while maintaining the same line, with a new Belgian chef from the Ardennes.
