This large, traditional building, firmly rooted in the heart of the village, remains true to the values of the region. While modernizing its recipes slightly, it cultivates quality through its organic farm, which supplies veal, beef, and lamb: crispy brawn and shank with a delicious gribiche sauce, organic lamb tagine with an Eastern twist, winemaker’s fondue, and tripe in apple juice... To drink, try Signy Abbey beer, Oubliette from Charleville, or cider.
