On the outskirts of Avignon, the Auberge de Cassagne has been one of the most popular addresses in the area for over forty years, a 5* hotel with timeless charm, a Provencal interlude of undeniable good taste. The kitchens benefit from the experience and know-how of two chefs with eloquent backgrounds: Philippe Boucher, who has been with the company since 1983, and formerly of Bocuse and Blanc, and Anthony Iorio, the new generation, who has worked with Donckele, Buron and Droisneau. Together, they have designed a fine menu for today: langoustine in zucchini flower, tomato and basil vinaigrette, peach return with Raimu-style bouillabaisse coulis, squab breast and confit legs, shallot tatin, sweet rhubarb and almonds from Provence, by Maud Poli. Excellent cellar, with over seven hundred references.
