Since the beginning of August, Isabelle and Hervé Duquesne have been based in a former convent, and now have a remarkable setting in which to pursue their adventure. With almost twenty years' experience behind them, they are now putting it to good use in a rustic, spacious setting, with minimal, chic decor, ideal for discovering the chef's current ideas on local produce. On the plate, for example, tomatoes, saint-marcellin, mushrooms and wild herbs, low-temperature saddle of rabbit, buckwheat blinis and coffee-walnut jus, a parfait glacé with peach, elderberry liqueur and almonds.
