She serves up winstub favourites such as the generous, melt-in-the-mouth presskopf with mustard vinaigrette and raw sauerkraut salad, as well as comforting home-cooked dishes like tender rabbit with a gourmet mustard sauce and fine spätzles. The centerpiece of the meal? The best knuckle of ham in town, poached then grilled, with meltingly tender flesh and delicious apples sautéed raw, prepared just in time. For dessert, the pot de crème au chocolat Valrhona is well-balanced.
