Hotel cuisine takes on its full meaning when, as here, it is part of a site and a history, that of the Schmidt family, who have run it for 70 years. A lovely site on the banks of the Lauter, a restaurant that has been embellished over the years in a contemporary style with regional touches, and a cuisine that's well done on Alsatian bourgeois foundations: goose foie gras, snails, trout with almonds, veal kidneys with spaetzle mustard sauce, Label Rouge poultry supreme, basmati rice cake with comté and shallot confit.
